So...what's up for tomorrow? Football, of course. Plus a main course of honey baked spiral ham.
I am going to amuse myself by smoking a brisket to be consumed later this week. I bought a half brisket. Well, actually, 2/3rds of one that is mostly the "point." Lots of fat on that end which should make for a very flavorful hunk of meat when it is all said and done. I sprinkled it liberally with a rub that I got from the "Salt Lick Barbecue" in Driftwood, Texas.
Also on the menu for tomorrow (as an appetizer) is going to be a generous serving of freshly deep fried tortilla chips. I am going to slice up some nice thin flour tortillas into little triangular wedges and fry them up and then serve them with some green chile and cilantro salsa. Beats the heck out of dried up tortilla chips in a bag...although we will have some of those, too, so that our guests will know and appreciate the difference.
We have a twelve pack of Shiner Wild Hare Pale Ale, a few bottles of wine and several different bottles of spirits. I am anticipating a very relaxing and enjoyable day.

Oh...and the bad weather which is poised to drop onto the midwest at any second is going to miss our area entirely. A quick perusal of accuweather.com reveals that we are not going to see any significant amount of snowfall during the next month. Bad for skiing, for sure. Plus, mrs. trapeze hates it when there is not snowfall on a regular basis...says that it's not winter-like. So I will have to endure bitching about an area that I have absolutely zero control over. Wonderful.
