Baking an apple pie

Pan, maybe this will be helpful from the folks that publish Cook's Illustrated--America's Test Kitchens Family Cookbook:

They suggest two kinds of apples (I know you have your favorite)--Granny Smith because it stays somewhat firm and McIntosh because it gets mushy.  But here's what may help-- 3 different temperatures--Preheat the oven to 500 with a baking sheet inside.  Put the pie on the baking sheet and turn down to 425 for about 25 min until top is golden. Rotate sheet and reduce heat to 375 for 30 - 35 min until juices are bubbling and crust is deep golden brown.
