Seed oils, vegetable oils
« on: June 07, 2021, 07:37:34 PM »
NN Taleb wrote two things of interest on diet. He wondered if the Mediterranean diet effect was due in part to the fasting practices of people in region. He was Greek Orthodox. He also said he tried to not eat anything that did not exist during most of human evolution as his body was likely not adapted to handle that. Hold that thought.

Now there is a theory that seed oils and vegetable oils not common until 120 years ago might be responsible for many modern diseases. Lard, red meat, dairy, and saturated fats are better for you. Olive oil and coconut oil have been around a long time. Soybean oil and Crisco may be evil. Make your own salad dressing without industrial seed oils, common on many labels. Some of the bad oils were around before but not eaten in large quantities.  I note that many salad dressings have soy bean oil.

If there is any interest in the seed oil is bad theory, there are some videos. The video below was mind blowing to me. How P&G and Crisco launched the American Heart Association.

I found this. Human consumption, maybe in US?

Poly Unsaturated Fat (PUFA) may be bad for you.
Olive oil is 78 pct monounsaturated, 8 polyunsaturated, 14 saturated.
Chicken fat is 47,22 31. I had no idea.
Turkey fat is 43, 23, 29. [from another site]
Beef fat is 44,4,52.
Soybean oil is 25,60,15. Many other seed oils are similar.
Coconut oil is 6, 2, 92/.
Canola oil is 62, 25,  6.6 [from other USDA site gms per 100 gms]
11:30 min in.
In 1930 PUFA grams per day was 15, 32 in 1981, 39 in 2005. Another third since then.

I recently eat more salads but was never a huge salad dressing fan. I make huge salads. Ranch and 1000 Island were OK but I never ate many salads before.

Vinegar is an acquired taste for me. I tried balsamic vinaigrette and it was OK. Raspberry vinaigrette was sweet and yummy. I just tried Italian and it is OK. I tried lemon  vinaigrette and it was too lemony for use on greens. Maybe great on pasta salad. I ordered a box with a lot of different mostly Target "Good and Gather" brand smaller bottles.  I plan to try more then pick some favorites and make my own likely using olive oil.

Rice vinegar, very mild.

Like olive oil, and often use butter (I like something as close to old farmer blend I can find) to cook with.  Reckon maybe rendering fat down for re-use makes sense about now, eh?

I use butter, not margarine. I think margarine is bad  for you. What is farmer butter? Is it in stores?

I looked at some salad dressing labels and saw soy bean oil or canola  oil as the first ingredient.

I call it farmer butter...usually smaller brand/co-op type stuff closer to the source (moo!)...it's just has to have a higher milk/butterfat content...stuff like Kerrygold Irish can be found most places...Land O'Lakes Euro blend is a fallback...want to find Pasture Raised but probably need to hit a Hy-Vee, Lunds/Byerlys...and Hy-Vee may have Kalona since they're Iwegian...
