Thanks for posting this, JF.

Grew up on a small farm and we butchered our own meat.
My dad could cut it up but he wasn't a butcher.
I learned a little bit about this as well as cutting up a few deer.

I still struggle with cuts

 Having some skill in this field is worth it. If were going to do some kind of prep thing we need to identify what we can and can't do depending on where we live. IE canning freezing and curing meats of all kind including smoking.

 Freezing is the weakest of them all because it depends on power being there.

 I think we need a new thread to cover that subject.
